Soya Shorba

Ingredients

  • 350 ml Vegetable stock
  • 30 gms Tofu (soya paneer)
  • 300 ml Tomato puree
  • 6 gms Garlic
  • 200 ml Soya milk
  • 4 gms Peppercorn & Bay leaves
  • 80 ml Soyabean refined oil
  • Salt to taste
  • 60 gms Soya flour
  • Coriander leaves for garnishing

How to Prepare

Cut 20 gms tofu into tiny cubes and grate the rest.

Heat 20 ml oil in a thick-bottomed pan. Add bay leaves, peppercorn and soya flour. Sauté till they become light brown crumbs.

In a separate pan, heat remaining oil. Add finely chopped garlic and tomato puree. Add the ingredients from the first pan and vegetable stock. Boil for about 5 minutes.

Strain the broth and gradually pour soya milk, stirring continuously. Add salt and tofu cubes. Boil for about 2 minutes.

Garnish with grated tofu and chopped coriander leaves. Serve piping hot.
