Soya Salad

Ingredients

  • 1 cup cooked soyabeans
  • 1 diced onion
  • 1 diced tomato
  • 1 diced capsicum
  • 1 tbsp coriander leaves, finely chopped
  • 1 tbsp mint leaves, finely chopped
  • 1 green chilly, finely chopped
  • 1/4 tsp freshly ground black pepper powder
  • 1 tsp lemon juice
  • Diced carrot, cabbage, sweet corn (optional)
  • Salt to taste

How to Prepare

Soak soyabeans in enough water for at least 8-10 hours.

Drain water, add fresh water and pressure cook with 1/2 tsp salt for three whistles.

In a bowl, mix all the ingredients except soyabeans.

Drain water from soyabeans and allow them to cool.

Add soyabeans and mix gently.

Transfer to a serving dish. Garnish with a mint sprig.
